One-way VPN connection

Hi,

I'm trying to set up a VPN connection to access remote computers. These computers are connected via Ethernet to PLCs that stream data that I want to gather.
So, basically I need to see the devices that are connected to the remote computer but I don't want the remote computer to be able to see all my network.

Is this possible? How could I do it?

Do I need a private network for every single one of those computers?

Enable all-default SecureNAT, it's one-way by design.

Is the one-way Client -> Server or Server -> Client?
So to speak should I make my PC the Server or the remote PC?
