I would like to set up a Softether vpn server on my Openwrt router. I found the follow webpage :

I followed all the steps and successfully compiled a vpn server package. The question to me now is how to run the server, is it necessary for me to install a softether vpn bridge? It is because in the download centre, I find that a softether vpn server (for windows) always comes with a softether vpn bridge.

Usually, VPN Bridge is not needed on a VPN Server host.

What about configuration? Is there a GUI for softether vpn? Or I need to use an editor to edit a particualar file?

If you have a Windows PC, you can use GUI tool (VPN Server Manager).
If not, please use CUI tool (vpncmd).
