How SAFE are the connections from packet sniffing ETC?

Hello,
I am in need of help. I must find out how safe the connections are when connecting to one of the VPN's listed under VPN gate. Currently I am connected to a VPN in germany and my specific question is for example: If I login to a bitcoin exchange what are the chances the owner of the VPN server will be able to know my passwords? I am currently wanting to use VPN gate to get into Chinese bitcoin exchanges that do not allow americans. :) It works, but I do not want the volunteers at the VPN server to be able to know my logins/passwords because I will be transferring large sums of bitcoin to do arbitrage.

Main purpose of VPN Gate is passing through a firewall.
VPN Gate don't secure safe connection.
Please do not send sensitive information even on VPN without encryption.
